This dish is made all over Greece when peas and tomatoes are ultra fresh and in season. You can use frozen peas when making this if fresh peas aren’t available. Shell the peas before measuring them for the recipe.

Greek Style Braised Peas (Araka Lathera) Recipe Ingredients:

  • 3/4 cup Greek olive oil
  • 2 pounds fresh or frozen peas
  • 6 scallions, trimmed and sliced
  • 3/4 pound tomatoes, peeled and chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 cups water
  • 3 tablespoons fresh dill

Directions to Make Greek Braised Peas:

Add the olive oil to a large skillet and set the heat to medium. Heat the oil for 1-2 minutes and then add the peas, scallions, and tomatoes. Saute the ingredients together for 3-5 minutes. Add the salt, pepper, and water and stir the pot to incorporate the ingredients well.

Cover the pot and bring the mixture to a boil over medium-high heat. Set the heat to low and simmer for about 30 minutes. Sprinkle the dill into the pot just before serving.
