Recipe for Greek Style Artichokes with Fava Beans

This traditional dish tastes best when using the freshest artichokes and fava beans that you can find. However, you can use canned or frozen artichokes and the dish will still taste great. Use ten canned fresh or frozen artichoke hearts to substitute for the medium artichokes in the recipe.

Greek Style Artichokes with Fava Beans (Aginares me Koukia) Recipe Ingredients:

  • 8 medium-sized, fresh artichokes, cleaned (trim small leaves, peel stem, and slice in half and remove hairy choke)
  • 6 tablespoons lemon juice
  • 3 cups water
  • 1/2 cup Greek olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 1/2 cup fresh or frozen shelled fava beans
  • 3 tablespoons fresh, chopped parsley, mint, or dill

Instructions on How to Make Artichokes With Fava Beans:

Soak the trimmed artichokes in a bowl that has been filled with the lemon juice and 1 cup of the water while preparing the rest of the recipe.

Add the olive oil to a skillet and heat over medium for about a minute. Add the garlic ad onion and saute until the onions soften, about 3 minutes. Drain the artichokes and add them to the skillet with the remaining 2 cups of water. Cover the skillet and bring the mixture to a boil. Reduce it to a simmer and cook the artichokes until soft, about 25 minutes total. Stir in the fava beans and simmer for another 10 minutes. Sprinkle with the fresh parsley or dill just before serving.
