Beets are commonly grown throughout Greece and Greek cooks don’t like to throw anything away. When they prepare the beets, they reserve the greens and make recipes such as this.

Greek Beet Greens Salad (Salatika Panzaria) Recipe Ingredients:

  • Reserved greens from 6 beets, cleaned
  • 1/4 cup boiling water
  • 1 recipe ladolemono

Instructions:

Tear the greens into small pieces and place in a bowl. Toss with the boiling water and let stand for ten minutes. Drain the water and set aside.

Prepare the ladolemono according to the recipe instructions. Toss into the beet greens. Serve the salad right away.
