This cold bean salad is typically served on the Greek islands and is also popular elsewhere in Greece. It is especially delicious during the warmer months.
Fassolia Salata Recipe Ingredients:
- 2 cups dried white beans, soaked overnight in water
- 1/3 cup finely chopped onion
- 1/4 cup chopped, fresh parsley
- 1 garlic clove, minced
- 3 medium tomatoes, diced
- 1 recipe ladolemono
Drain the water out of the beans after soaking them overnight. Transfer the beans to a pot and add more water. Make sure the water covers the beans. With the pot covered, boil the beans over medium-high heat. Once it boils, simmer the beans over low heat for about one hour or until the beans are tender. Once they’re tender, drain out the water and let them cool to room temperature before preparing the salad.
Add the beans to a medium bowl. Add the onion, parsley, garlic, and tomatoes and toss until all the ingredients are combined. Toss in the ladolemono. Serve right away or store in the refrigerator for up to three days before serving.
