Variations of this refreshing salad are served all over Greece, especially when all these ingredients are in season. Substitute the celery for a fresh fennel bulb to change the flavors, if desired.

Fava Bean Salad Recipe Ingredients:

  • 2 cups fresh or frozen shelled fava beans
  • 3 stalks celery, chopped
  • 5 scallions, sliced thin
  • 1/3 cup Greek olive oil
  • 1 lemon, juiced
  • Salt, to taste
  • Pepper, to taste

Directions to Make Fava Bean Salad:

If using frozen fava beans, let them thaw before preparing the recipe.

Add the fava beans, celery, and scallions to a bowl and toss together.

Toss in the olive oil, lemon juice, salt, and pepper.

Serve immediately or refrigerate to use later. This salad keeps well for a few days in the refrigerator.
