Fresh sardines are fairly common in Greek waters. This recipe is one of the most common ways to prepare them.

Greek Style Fried Sardines Recipe Ingredients:

  • 1 1/2 pounds fresh sardines, cleaned but kept whole
  • 3/4 cup all-purpose flour
  • Salt, to taste
  • Pepper, to taste
  • Greek olive oil, for frying
  • Lemon wedges, to garnish

Directions on How to Prepare Greek Style Fried Sardines:

Blot the sardines with paper towels to dry them out.

Add the sardines, flour, salt, and pepper to a bowl or a large, clean plastic bag. Toss the ingredients in the bowl using a wooden spoon or tightly seal and then shake the bag. The goal is for all the ingredients to be dispersed.

Pour Greek oil into a large, deep skillet so that about 1 inch of the pan is covered with the oil. Set the heat to medium and let the oil warm up. The oil should reach about 350 degrees Fahrenheit.

Drop the fish into the pan one at a time. Do this carefully so the oil doesn’t splatter. Be sure that the pan isn’t overcrowded. You may need to cook the fish in batches. Cook until all sides are golden brown.

Remove from the skillet using a slotted spoon and place on clean paper towels. Drizzle with lemon juice just before serving.
