Recipe for Greek Style Greens with Zucchini

Stewed greens are a popular addition to the Greek table and they are usually served either cold or warm. Recipes can be found all over Greece for this popular dish, and some even contain other ingredients. This one uses garden fresh zucchini as part of it.

Greek Style Greens with Zucchini (Horta ke Kolokithia) Recipe Ingredients:

  • 3 tablespoons Greek olive oil
  • 1 shallot, minced
  • 1 pound zucchini, trimmed and coarsely chopped
  • 2 pounds mixed greens, such as spinach, swiss chard, kale, dandelion, etc
  • 1 large tomato, chopped
  • 1 teaspoon dried oregano
  • 1 recipe ladolemono

How to Prepare Greek Style Greens With Zucchini:

Drizzle the olive oil into a deep skillet and set the heat on medium-high. Let the oil warm for about a minute and then add the shallot. Let the shallot pieces soften for about two minutes.

Add the zucchini and let saute for about two minutes, stirring often with a wooden spoon. Stir in the greens and lower the heat to medium.

Saute the greens until they reduce down. This should take around ten minutes. Stir in the tomato and sprinkle with oregano. Cook for another minute or two so that the tomato can warm.

Remove from the heat and place in a serving platter. Toss with the prepared ladolemono just before serving.
