Recipe for Greek Style Herring Rice Pilaf

Herring filets are commonly found throughout Greece. This recipe is just one way to prepare it.

Greek Style Herring Rice Pilaf (Pilafi me Renga) Recipe Ingredients:

  • 10 ounces herring filets
  • 1/2 cup Greek olive oil
  • 1 medium onion, chopped
  • 1 cup long grain rice
  • 1 cup chopped, canned tomatoes
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup chopped, fresh parsley

Directions to Prepare Herring Rice Pilaf:

Bring 3 cups water to a boil and add a pinch of salt. Add the herring filets and pouch for 3 minutes. Remove the filets from the water and shred them into little pieces using a fork. Measure out two cups of the cooking liquid and set aside.

Add the olive oil to a deep skillet and set the heat to medium. Let the oil heat for a minute and then add the onions. Saute until the onions are soft. This should take about ten minutes. Set the heat to low and add the reserved cooking liquid, the rice, and tomatoes. Sprinkle salt and pepper over the mixture, cover, and let the rice cook until all the liquid is absorbed. Just before serving, stir in the herring and parsley.
