Honey can be found all over Greece. For best results, use authentic Greek honey for this recipe if you can find it.
Greek Style Honey Ice Cream Recipe Ingredients:
- 3 cups heavy cream
- 1 cup whole milk
- 1/2 cup honey
- 1 vanilla bean, seeds removed
- 4 large egg yolks
- 1 tablespoon vanilla extract
Add the cream, milk, honey, and vanilla beans to a saucepan and set the heat to medium until hot. Don’t let the mixture boil.
Pour the egg yolks into a glass mixing bowl and whisk well. While whisking vigorously, pour 1 cup of the hot cream mixture into the bowl.
Set the heat to low. While whisking the cream mixture in the pan, slowly pour the egg yolk mixture back into the pan. Keep whisking until it gets thick.
Pour the custard into a bowl and cover with plastic wrap to let the custard get cold. This should take about 6 hours. Once the mixture is cold, pour it into an ice cream machine and follow the manufacturer’s instructions.
