Recipe for Greek Style Lentil Salad

Lentils are popular in Greek cuisine. One of the most popular dishes is lentil soup, but lentil salads such as this run a close second.

Greek Style Lentil Salad Recipe Ingredients:

  • 2 cups uncooked lentils, rinsed
  • 1 teaspoon ground cumin
  • 1 small red onion, chopped
  • 1/2 cup fresh, chopped parsley
  • 2 tablespoons chopped, fresh mint
  • 1 recipe ladolemono

Instructions on How to Prepare Greek Style Lentil Salad:

Add the lentils to a pan and fill with water so that there is about 1 1/2 inches of water above the lentils.

Cover the pan and set the heat to medium. Let the mixture cook until it boils. Reduce the heat to low and let it simmer until the lentils are tender. This should take about 20-30 minutes.

Strain the lentils out and place them in a bowl. Toss in the cumin, onion, parsley, and fresh mint.

Prepare the ladolemono and toss into the salad just before serving.

** This recipe contains olive oil, which isn’t permitted during strict fasting. If you adhere to a strict fast, omit the olive oil and using nonstick cooking spray in a nonstick pan to sauté, instead.
