This simple dish is made from rice and lentils, and is popular on islands like Crete. It tastes best when served with feta cheese or Greek yogurt.
Moukentra Recipe Ingredients:
- 1 cup dried lentils, rinsed
- 1 bay leaf
- Water, for the pot
- 1/2 cup Greek olive oil
- 1 medium onion, chopped
- 2 1/2 cups chicken or vegetable stock
- 1 cup medium-grain rice
- 1/2 teaspoon crushed red pepper flakes
- Salt, to taste
- Black pepper, to taste
- 1/2 cup chopped, fresh parsley
Add the lentils and bay leaf to a medium-sized pot. Stir in water so that the lentils are covered by about 2 inches. Place the lid on the pot and bring the lentils to a boil over medium-high. Drop the heat to low and simmer for about 20 minutes. Drain the lentils through a strainer and let them sit.
Clean and dry the pot. Pour the oil into the pot and set the heat to medium. Add the onions and saute for about 5-minutes, or until the onions are soft. Add the lentils and saute for about 1 minute. Stir in the stock, rice, red pepper, salt, and black pepper. Cover the pot and bring the mixture to a boil. Once it boils, drop the heat to low and simmer it until all the liquid is absorbed. Stir in the fresh parsley just before serving.
