Recipe for Greek Style Marinated Mushrooms

Versions of this recipe are served throughout Greece whenever mushrooms are in season. Be sure to clean the mushrooms in advance. If you need to rinse the mushrooms with water, you’ll want to make sure that they are dry before preparing this recipe. You’ll want to keep the mushrooms whole for this recipe.

Greek Marinated Mushrooms Recipe Ingredients:

  • 1/3 cup Greek olive oil
  • 3 cloves garlic, chopped
  • 1/4 cup vinegar
  • 1 tablespoon whole coriander seeds, lightly crushed
  • 1 teaspoon Greek oregano
  • 1/2 teaspoon ground black pepper
  • 1 1/2 pounds small or medium mushrooms, stems trimmed

Instructions on How to Prepare Greek Marinated Mushrooms:

Pour the olive oil into a saucepan and set the heat to medium. Let the oil heat for one minute and then add the garlic cloves. Let the garlic heat for 1-2 minutes, or until you can smell the garlic.

Add the vinegar, coriander, oregano, and black pepper. Stir to coat the ingredients in the oil. Let the mixture heat all the way through for about 1 minute.

Toss in the mushrooms so that they are coated in some of the oil. Let them saute until they just begin to soften. This will take about five minutes.

Transfer the mushrooms with the oil from the pan to a nonreactive bowl and cover with plastic wrap. Refrigerate for at least 24 hours before serving. The mushrooms taste better, however, if you keep them in the refrigerator longer. It’s optimal if you let them sit for four days before servings.
