Greens grow all over Greece at different times of the year. This salad tastes best when the greens listed are in season.

Greek Islands Style Mixed Greens Salad Recipe Ingredients:

  • 5 cups mixed greens, such as watercress, chicory, endive, spinach, purslane, romaine, dandelion, radicchio, and arugula
  • 1 recipe ladolemono
  • 1/3 cup fresh, chopped parsley
  • 1/2 cup pitted Kalamata olives
  • 1 cup whole wheat croutons (optional)

Instructions on How to Prepare Greek Islands Style Mixed Greens Salad:

Place the mixed greens in a bowl and toss to incorporate them.

Prepare the ladolemono according to the recipe instructions.

Drizzle half over the salad greens and toss to distribute.

Leave the rest of the dressing in a small dish so that people can add more to their portion if they want.

Add the parsley and toss until evenly distributed. Sprinkle the olives and croutons (optional) over the top.  Serve immediately.

** This recipe contains olive oil, which isn’t permitted during strict fasting. If you adhere to a strict fast, omit the olive oil in the dressing.
