This bread recipe uses olives and is popular throughout Greece. You can use either the traditional Greek bread recipe of the country bread recipe as the base, depending on what you have on hand.

Greek Style Olive Bread (Eliopsomo) Recipe Ingredients:

  • 1 recipe Greek bread or Greek country bread
  • 2 tablespoons finely minced onion
  • 2/3 cup pitted Greek olives, chopped
  • 1 egg plus 1 tablespoon water, scrambled

How to Bake Greek Olive Bread:

Prepare your bread recipe of choice according to the recipe instructions. After the dough rises once and you punch it down, knead in the onion and olives before forming the dough into the loaf shapes. Place on a baking sheet brushed with oil. Let each loaf rise until doubled.

Preheat the oven to 350 degrees Fahrenheit. Brush the loaves with the egg wash. Place the baking sheet in the center of the oven and bake until golden brown. This should take about 30 minutes. You’ll know that the loaf is done if you, when you knock on it, the loaf is slightly firm and makes a hollow sound.

This recipe should yield 2 medium-sized loaves.
