Although this dish calls for spinach, you can actually use anything you might have on hand. It’s a great way to use up any extra greens you may have on hand, such as dandelion greens, swiss chard, et cetera.

Fasolia me Horta Recipe Ingredients:

  • 1/3 cup Greek olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 3 cups chopped spinach
  • 3 cans white beans (about 1 pound cooked beans)
  • 1/4 cup fresh, chopped parsley
  • Salt, to taste
  • Pepper, to taste

How to Make Greek Style Beans With Greens:

Pour the olive oil into a large pot and set the heat to medium. Add the onion and saute until soft. Add the garlic and saute for another minute. Set the heat to medium-low and add the tomatoes. Cook the tomatoes for five minutes. Stir in the greens and cover the pot.

Set the heat to low and cook the greens until wilted. This should take 5-10 minutes. Uncover the pot and stir in the beans, parsley, and salt and pepper. Cook for another 3-5 minutes until the beans are heated all the way through.
