Onions are popular throughout Greece. This simple Greek dish features roasted onions that are then finished with Greek olive oil and vinegar.

Greek Style Roasted Onions (Kremidia Ofta kai Chidata) Recipe Ingredients:

  • 4 medium onions (leave peels on)
  • 4 teaspoons Greek olive oil
  • Salt, to taste
  •  Red wine vinegar, to garnish

Instructions:

Preheat oven to 450 degrees Fahrenheit.

Rub each onion with 1 teaspoon of olive oil and place on a baking sheet.

Place the baking sheet in the center of the oven.

Roast until the skins are brown and the insides are soft. This should take about one hour.

Take the baking pan out of the oven and let the onions cool enough so that you can handle them. Peel off the skins, and then sprinkle each onion with salt and red wine vinegar, to taste.

This dish tastes best served hot.
