  • 4 dozen fresh sea urchins, removed from shell and soaked in cold water
  • Lemon wedges or red wine vinegar
  • Fresh, chopped parsley, dill or chives, to garnish

Instructions on How to Make Greek Sea Urchins:

It is very important that the sea urchins are as fresh as possible. It is also important that as you’re cleaning the sea urchins, you are sure to remove all the spines and shell pieces.

Transfer the meat from the cold water to a serving platter. Drizzle the sea urchins with lemon juice or red wine vinegar. Garnish with parsley, dill, or chives. Serve immediately.
