There are variations of this soup that are found all over Greece and the ingredients can change depending on what’s available. In some parts of Greece, vegetable broth or chicken broth is used to form the stock. If you don’t like mint, consider substituting it for fresh, chopped parsley or even dill

Greek Style Spring Vegetable Soup Recipe Ingredients:

  • 3 tablespoons Greek olive oil
  • 3 leeks, cleaned, trimmed, and chopped
  • 1 large onion, choppd
  • Salt, to taste
  • Pepper, to taste
  • 4 cups stock, such as vegetable or chicken
  • 5 cups fresh or frozen shelled peas
  • 2/3 cup fresh chopped, mint or parsley
  • 1/2 cup fresh, chopped herbs such as chives
  • 1/2 cup Greek yogurt

Directions to Prepare Spring Vegetable Soup:

Pour the olive oil into a large saucepan and set the heat to medium. Let the oil warm for about 1-2 minutes and then add the onions and leeks. Saute for about five minutes, or until the onions are soft. Sprinkle in the salt and pepper and then stir in the broth and peas.

Cover the pot and bring the soup to a boil over medium-high heat. Once the soup boils, reduce the heat to low and simmer for about 30 minutes. Stir in the mint, chives, and yogurt just before serving.
