Recipe for Greek Style Squid in Tomato Sauce

This recipe appears to originate in the Greek islands and coastal areas. Versions of it are served on islands such as Crete, where the locals seem to prefer using island-grown green olives. You can use whichever pitted Greek olives you have on hand.

Greek Style Squid in Tomato Sauce Recipe Ingredients:

  • 5 tablespoons Greek olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 1 3/4 cups canned, diced tomatoes (with their juices)
  • 1/2 cup sweet or semi dry white wine
  • 2 tablespoons fresh squeezed orange juice
  • 1 teaspoon dried Greek oregano
  • 1 bay leaf
  • 12 Greek pitted olives, sliced
  • Salt, to taste
  • Pepper, to taste
  • 12 medium squid, cleaned, rinsed, and into 1-inch rings
  • 2 tablespoons fresh, chopped parsley

How to Prepare Greek Squid in Tomato Sauce:

Drizzle the olive oil to a skillet and set the heat to medium. Add the onion and saute until soft, which should take about five minutes. Add the garlic and saute for an additional minute. Stir in the tomatoes, white wine, orange juice, oregano, bay leaf, olives, salt, pepper, and squid. Cover the skillet and raise the heat to medium-high. Let the mixture come to a boil and then set the heat to low so that it can simmer until the squid is cooked all the way through. This should take about thirty minutes. Sprinkle with parsley just before serving.
