If you have access to almond trees, consider picking some of the almonds when they’re green and then cooking this dish! It’s a traditional preparation on islands such as Ikaria where there are plenty of almond trees.

Greek Style Stewed Green Almonds With Onion and Tomatoes (Tsagala Yahni) Recipe Ingredients:

  • 1/2 cup Greek olive oil
  • 1 large onion, chopped
  • 1/2 pound green almonds, rinsed and stems scraped – (don’t remove fuzzy shell)
  • 4 plum tomatoes, chopped
  • 1/2 teaspoon sugar
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh lemon juice
  • Water, as needed

How to Prepare Greek Stewed Greens With Almonds:

Pour the olive oil into a deep skillet and set the heat on medium. Add the onions and saute until soft, which should take about five minutes. Stir in the almonds so that each is coated in oil.

Stir in the tomatoes, sugar, salt, pepper, and lemon juice. Pour water into the skillet until it goes up the skillet about halfway. Cover the mixture and bring it to a boil. Once it boils, set the heat to low and simmer it until the almonds are soft and the fuzzy coating breaks apart. This should take 20-30 minutes but it may take longer depending on how soft the almonds were.
