This dish is especially popular throughout Greece when peppers and tomatoes are in season. It makes for an excellent side dish or as a meze. You can substitute canned, drained plum tomatoes for the fresh tomatoes if you don’t have any on hand.

Greek Style Stewed Peppers (Piperies Yiahni) Recipe Ingredients:

  • 1/2 cup Greek olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 1 1/2 pounds red, yellow, or orange bell peppers, halved with stems and seeds removed
  • Salt, to taste
  • 1 1/2 cups chopped, fresh plum tomatoes
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 tablespoon dried Greek oregano

How to Make Greek Stewed Peppers:

Pour the olive oil into a deep skillet and set the heat to medium. Add the onion and saute until soft, about 5-10 minutes. Stir in the garlic cloves and saute for another minute. Add the peppers and salt. Set the heat to low, cover the pan, and cook the pepper halves until they soften. This should take about 10 minutes.

Remove the cover to stir in the tomatoes, tomato paste, bay leaves, and oregano. Cover the skillet again and cook until all the ingredients are soft. This should take about 7 minutes. Discard the bay leaves just before serving.
