Greek Style White Beans with Greens (Fasoulia me Horta) Recipe Ingredients:

  • 1 pound white navy beans beans
  • 1/4 cup Greek olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 6 cups mixed, chopped greens, such as spinach, endive, beet greens, kale, etc
  • 2 medium tomatoes, chopped
  • Salt, to taste
  • Pepper, to taste

Directions to Prepare Greek White Beans With Greens:

Add the beans to a medium bowl and fill the bowl with water. Soak overnight.

When ready to cook the dish, drain the beans in a colander and rinse with cold water. Place the beans in a large pot and fill with cold water. Bring beans to a boil and then reduce the heat to low. Simmer for about 45 minutes. Drain and set aside.

Add olive oil to a large pot or Dutch oven and heat over medium. Add the onions and garlic and saute for five minutes, or until the onions are translucent. Add the beans and saute for another three minutes.

Add the tomatoes and saute for another 2 minutes. Add the greens, set the heat to low, and cover the pot. Let the greens cook down fully – this should take about 5-10 minutes.

Remove the lid from the pot and stir the ingredients together. Add salt and pepper to taste.
