Rice pudding is an easy and simple dessert that is served throughout Greece. The basic version, which has vanilla and cinnamon, is the most popular version. This recipe is one of the other popular versions that can be found. It includes fresh orange juice, which is readily available because orange trees grow well all over Greece.

  • 1 cup water
  • 1/2 cup uncooked, medium grain rice
  • 4 cups milk
  • 1 1/2 tablespoons flour
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh orange juice
  • Cinnamon, to garnish

How to Prepare Rice Pudding With Orange Juice:

Pour the water into a medium-sized saucepan. Set the heat to medium, cover the pan, and bring the water to a boil. Remove the lid, set the heat to medium-low, and add the rice. Stir well. Replace the lid, set the heat to low, and simmer the rice for fifteen minutes.  Add the milk to the rice and water mixture and simmer for an additional 30 minutes over low heat, stirring the mixture with a fork a few times during the cooking process. Once the thirty minutes is up, stir in the vanilla and orange juice. Garnish with cinnamon just before serving.
