The higher quality the capers are, the more delicious this spread will be! This spread is commonly spread on slices of bread or served as a dip with bread slices.

Greek Style Stewed Caper Spread (Kapari Magirefti) Recipe Ingredients:

  • 1 cup large capers, salt packed preferred
  • 1/2 cup Greek olive oil
  • 1 large onion, peeled, halved, and sliced thinly
  • 1 cup sweet red wine, such as Mavrodaphne
  • 1/2 cup water
  • 2 tablespoons red wine vinegar
  • Black pepper, to taste

Directions to Make Greek Stewed Capers:

Place the capers in a fine mesh colander and rinse for a minute or two until the brine solution or salt, depending on the type of capers you use, is rinsed away.

Add 1/4 cup of the olive oil to a medium saucepan and saute the onions for a few minutes over medium heat, or until they become soft and translucent. This should take about five or six minutes. Add capers and the rest of the olive oil and cook for another minute or two, or until the capers begin to sizzle.

Add the wine to the saucepan and drop the heat to medium-low. Simmer the wine in the mixture for one minute. Add the water and vinegar to the saucepan and set the heat to low or until most of the liquid is absorbed. Transfer to a serving dish and let cool all the way through before serving. This can be made a day or two in advance before serving.
