Snails are a popular food to eat in Greece, especially on islands like Ikaria. They’re harvested fresh and then usually braised. This particular dish is a fairly popular way to make them.

Karyvolia Recipe Ingredients:

  • 2 1/2 pounds snails in the shell, cleaned
  • 1 cup red wine vinegar
  • 1 tablespoon salt
  • 1/2 cup Greek olive oil
  • 3 medium onions, chopped
  • 1 cup chopped, canned tomatoes, with the juices
  • 2 cups water

Instructions to Prepare Greek Braised Snails:

Place the snails in a post and fill the pot with cold water. Add the vinegar and 1 tablespoon of salt. Bring the contents to a boil over medium high heat. Reduce the heat to low and simmer for another ten minutes. Skim the gunk from the top of the pot and then strain the snails. Rinse with cold water and set aside.

Pour the oil into a skillet and heat over medium. Add the onions and saute for ten minutes, or until they’re soft. Add the snails to the skillet and stir them. Stir in the tomatoes and the water. Bring the mixture to a boil and then reduce the heat to low. Simmer for ten minutes and then serve them right away in their shell.
