In Greece, very little is wasted. After an orange is peeled, there’s still a use for it. People often turn it into a spoon sweet, which is a type of dessert that is, in a lot of ways, representative of Greek hospitality. They are usually saved to serve guests.
Greek Orange Spoon Sweet (Glyko Portokalaki) Recipe Ingredients:
- 1 pound oranges
- 2 cups granulated sugar
- 1/2 cup honey
- 3/4 cups water
- 1 teaspoon lemon juice
How to Prepare Orange Spoon Sweet:
Peel the orange using a vegetable peeler, being careful to leave as much of the white on the orange as you can. Juice two of the oranges to use in this recipe. Set the rest of the oranges aside to use for another recipe. Cut the peel into thin strips. Set them aside.
Add the sugar, honey, water, and lemon juice to a saucepan. Set the heat to medium and stir constantly until the sugar is dissolved. Stir in the orange peels and orange juice and continue to cook until the mixture starts boiling. Lower the heat to a simmer and cook until the mixture thickens. This should take about twenty minutes.
Transfer the spoon sweet to a clean jar and cover the jar after it cools slightly. Store in the refrigerator for up to a few weeks.
