This simple dish can be prepared very quickly and is popular throughout Greece as a simple meal. If you can’t find kefalotiri cheese, use Romano cheese instead.
Macaronada Recipe Ingredients:
- 1 pound (16 ounces) pasta, any variety (spaghetti, linguini, etc)
- 1/3 cup Greek olive oil
- 4 tablespoons grated kefalotiri (Greek cheese)
- 3 tablespoons chopped, fresh parsley
Prepare the spaghetti according to the directions on the package. Cook the spaghetti to “al dente”, which means that it is cooked all the way through but still slightly firm. Drain the spaghetti and transfer it to a serving dish. Toss in the olive oil, cheese, and parsley and serve immediately.
