This almond cream is served throughout Greece when almonds are in season. Since almonds keep for months after they’re picked and roasted, however, this really can be made anytime. The texture resembles a velvety, rich pudding.

Greek Style Almond Cream Recipe Ingredients:

  • 3 tablespoons corn starch
  • 2 tablespoons rice flour
  • 2 cups while milk
  • 1/4 cup Greek honey
  • 1 egg yolk
  • 1 1/4 cup ground almonds or almond flour
  • 1/4 teaspoon ground mace or nutmeg
  • 1/4 cup toasted almonds
  • Sifted confectioners’ sugar

Instructions on How to Prepare Greek Style Almond Cream:

Mix together the cornstarch and rice flour in a small bowl using a fork. Stir in 1/4 cup of the milk into a smooth paste forms. Set aside.

Add the rest of the milk to a large saucepan and set the heat to medium. Let the milk warm for a few minutes. You don’t want the milk to boil.

Using a whisk, add the flour and cornstarch paste to the saucepan and whisk vigorously. Bring the mixture to a boil over medium heat. Reduce the heat to low and let it simmer for 1 minute.

Pour the mixture into a glass bowl. Whisk in the honey and egg yolk. Stir in the ground almonds and the mace using a wooden spoon.

Cover the bowl with plastic wrap and refrigerate for at last 6 hours. Spoon the mixture into individual serving bowls. Sprinkle with almonds and confectioners’ sugar just before serving.
