Greek Style Braised Chicken with Peas (Kotopoulo me Araka) Recipe Ingredients:

  • 3 tablespoons Greek olive oil
  • 1 medium onion, chopped
  • 4 chicken drumsticks (with skin on)
  • 1/3 cup dry white wine
  • 1 cup warm chicken stock
  • 16 ounces crushed, canned tomatoes (with their juices)
  • 1 pound uncooked, shelled peas (fresh or frozen)
  • 1 teaspoon Greek oregano
  • 3 tablespoons fresh, chopped parsley

How to Prepare Greek Braised Chicken With Peas:

Pour the olive oil into a large pot and set the heat to medium. Heat the olive oil for a few minutes. Add the onions and saute until they soften. This should take about 4-5 minutes.

Add the chicken drumsticks and raise the heat to medium-high. Sear the meat for 2-3 minutes on each side so that it becomes brown. Remove the chicken from the pan.

Stir the wine into the pan using a wooden spoon. Be sure to scrape the bottom of the pan with the spoon to remove the brown bits. Add the chicken stock and continue to stir. Add the tomatoes and peas and stir well.

Sprinkle the mixture with oregano and then add then add the drumsticks back to the pan, being sure to cover the drumsticks with some of the tomato mixture.

Cover the pan and let the mixture come to a boil. Once it does, reduce the heat to low and simmer it for thirty minutes. Sprinkle the contents of the pot with parsley just before serving.
