This dish originates from he island of Corfu and uses whichever white fish you can find that is fresh. Good choices include haddock, cod, and even halibut. It all depends what is available in the markets.

Greek Style Baked Fish from Corfu (Bourtheto) Recipe Ingredients:

  • 4 white fish filets, cleaned (about 14 ounces each)
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup Greek olive oil, divided
  • 1/2 cup fresh, chopped parsley
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 1/4 cup red wine vinegar
  • 1 tablespoon Greek honey
  • 1/3 cup dry red wine
  • 4 large tomatoes, peeled, seeded, and diced
  • 3 bay leaves
  • 1/2 teaspoon dried thyme

Instructions to Prepare Corfu Style Baked Fish:

Spray a baking dish with nonstick cooking spray or brush with olive oil.

Place the fish filets in the baking dish skin-side down. Drizzle lemon juice over the filets and sprinkle with salt and pepper. Drizzle 1/4 cup of the olive oil over the fish and then sprinkle the chopped parsley over it. Cover the dish with plastic wrap. Refrigerate for one hour to let the ingredients marinate.

After 30 minutes or so, begin preparing the rest of the ingredients.

Drizzle the remaining 1/4 cup olive oil into a skillet. Set the heat to medium and add the chopped onions. Saute until the onions become soft, which should take about five minutes. Add the garlic and saute anothr minute. Stir the red wine vinegar, honey, and red wine into the skillet using a wooden spoon, being careful to scrape the bottom to release any brown bits that may have formed. Cook until the liquid bubbles and thickens to form a syrup.

Stir in the tomatoes and season the mixture with salt and pepper. Cook for about five minutes until the tomatoes begin to soften. Stir in the bay leaves and thyme and cook for another minute. Remove the mixture from the heat and let it rest.

Preheat the oven to 350 degrees Fahrenheit.

Take the fish out of the refrigerator after a full hour is up and pour the tomato mixture over it. Place the fish in the center of the oven and bake until the fish is cooked all the way through. This should take about thirty minutes.
