Greek Coffee Ingredients and Equipment:
- Greek coffee grounds
- Cold water
- Demitasse cups
- Briki, the small pot used to make the coffee
Using the demitasse cups, measure out the water depending on how many cups of Greek coffee you want to make. If you want to make 2 cups of Greek coffee, fill the cup up twice and place the water in the briki.
For every cup of coffee you will make, add 2 teaspoons of Greek coffee grounds with the appropriate amount of sugar, if desired. If you would like it medium, or metrios, you’ll use 1 tsp of sugar for each cup. If you would like it glykos, or sweet, use 2 teaspoons, and those who want it even sweeter than that can use 3 teaspoons per cup. Of course, you could always drink it without sugar. Stir the contents of the briki gently with a small spoon after you add the sugar.
Set the heat on your stove to medium. Place the briki over the burner and let it heat until it starts to bubble. Don’t walk away from it because this process tends to happen quickly. Once it bubbles, lift it from the stove and wait until the bubbles settle. Place it on the stove and let it sit on the burner until it bubbles again. Lift it up and then place it back down again after the bubbles settle. Repeat this process again one more time. Pour immediately into the demitasse cups. Don’t worry about getting the grounds in your cup, that’s part of the fun!
