Recipe for Greek Style Grilled Lemon Chicken

Written by in , Comments Off on Recipe for Greek Style Grilled Lemon Chicken

This recipe uses boneless chicken breasts but you can really use any cut of chicken that you want, even those that have the bone. Note that you will have to adjust the cooking times if using anything other than chicken breasts, especially if the chicken has the bones.

Greek Style Grilled Lemon Chicken (Lemonati Kota sta Karvouna) Recipe Ingredients:

  • 1/4 cup lemon juice, from around 2 lemons
  • 1/4 cup Greek olive oil
  • 2 teaspoons dried oregano
  • 2 scallions, trimmed and sliced
  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil, to brush grill

Instructions to Make Grilled Lemon Chicken:

Add the lemon juice, olive oil, oregano, and scallions to a mixing bowl and whisk together until well combined.

Rinse chicken well with cold water and dry with paper towels. Sprinkle both sides with salt and pepper. Place chicken in a large plastic bag with the prepared lemon juice mixture. Seal the bag and place it in the refrigerator for one hour, or overnight.

Brush the grill with olive oil and preheat it to medium or prepare the coals if using charcoal grill. Place each chicken breast on the grill spaced evenly apart, being careful not to crowd them. Cook for five minutes or so on both sides until the chicken is cooked through. Total cooking time should take 10 – 12 minutes depending on how hot the grill is. Remove from grill and serve immediately.
