Avgolemono is a type of Greek sauce that is made using broth, egg, and lemon. It is used in a variety of dishes, including Youvarlakia Avgolemono, which is Greek-style meatball soup.

Greek Style Meatball Soup (Youvarlakia Avgolemono) Recipe Ingredients:

  • 1 recipe keftedes
  • 1/2 cup uncooked medium-grain rice
  • 6 cups hot water
  • 1 recipe avgolmono sauce
  • Fresh, chopped parsley – to garnish

Instructions to Prepare Greek Meatball Soup:

When making the keftedes, add uncooked rice to the meat and then cook the meatballs as usual.

Place the meatballs in a medium stockpot. Pour hot water over the meatballs and cover the pan. With the heat on medium, bring the water to a boil. Set the heat to low and simmer for thirty minutes.

Using two cups of the broth, prepare one recipe of avgolemono sauce. Mix the sauce in with the broth and meatballs. Serve the soup right away. Garnish each portion with fresh, chopped parsley if desired.
