This sweet almond drink uses ground almonds to form its base. It is popular in the summer, especially as one of the beverages of choice at weddings. It is especially popular in parts of Greece where there are a lot of almond trees.

Greek Style Sweet Almond Drink (Soumatha) Recipe Ingredients:

  • 1 1/4 cups blanched almonds
  • 3 cups granulated sugar, divided
  • 4 cups water, divided
  • 3 drops vanilla or almond extract

How to Prepare Sweet Almond Drink:

Add the almonds to a food processor and pulse until they’re chopped fine. Make sure that they don’t get completely pulverized – they need to still be a little coarse.

Add 4 tablespoons of sugar and 4 tablespoons of water to the almonds and pulse until a paste is formed.

Pour the rest of the sugar and water into a saucepan and set the heat to medium. Heat the mixture until the sugar is dissolved. Stir the mixture constantly with a wooden spoon until the sugar dissolves. Bring to a boil with the pan uncovered and then set the heat to low. Simmer for 8 minutes.

Stir in the almonds paste and raise the heat back up to medium. Keep stirring constantly throughout the cooking process so that the paste doesn’t stick. Let it cook for about ten minutes.

Remove the pan from the heat and let it cool in the pan for about twenty to thirty minutes. Strain the mixture into a clean mason jar through a cheese cloth. Be sure to squeeze the cheesecloth before you discard it to remove any excess moisture. Stir in the vanilla or almond extract just before covering the jar with the lid. Store in the refrigerator for up to two weeks.

To make the drink, fill a glass halfway with ice. Fill it halfway with the syrup and then top the glass off with water. Stir well before drinking. You can make this drink with both sparkling mineral water and regular tap water.
