This popular rice pilaf dish is common the Greek island of Crete. You can substitute beef for lamb if you can’t find boneless lamb.

Cretan Greek Style Rice Pilaf with Lamb and Chicken Recipe Ingredients:

  • 4 tablespoons Greek olive oil, divided
  • 1/2 pound boneless lamb, cut into 1/2-inch pieces
  • 1/2 pound boneless chicken breast, cut into 1/2-inch pieces
  • 1/2 large onion, finely chopped
  • 1 1/2 cups uncooked, long-grain rice
  • 4 cups water
  • 1 fresh lemon, juiced
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons fresh, chopped parsley

How to Make Pilaf With Lamb and Chicken:

Drizzle 2 tablespoons of olive oil in a large saucepan and set the heat to medium. Add the lamb and chicken and fry until the pieces are cooked all the way through. This should take about ten minutes. Remove the meat from the pan.

Drizzle the remaining olive oil into the pan. Add the onion and saute until soft, which should take about five minutes. Stir in the rice and saute with the onion for another minute. Stir in the meat, water, lemon juice, salt, and pepper. Cover the pan and bring the mixture to a boil. Let simmer until the rice is soft. This should take about 20 minutes.

Sprinkle with fresh, chopped parsley just before serving.
