Some variation of this salad is commonly prepared when fava beans are fresh and in season. You can substitute fresh lima beans for fava beans if you can’t find them in the store. Use authentic black Greek olives such as Kalamata or Amfissa olives if you can find them.

Fassolia Salata me Elies Recipe Ingredients:

  • 3 pounds fava beans, in their pods
  • 16 pitted black Greek olives, halved
  • 1 small onion, chopped
  • 1/3 cup fresh, chopped parsley
  • 1 recipe ladolemono

Instructions on How to Make Greek Fava Bean Salad With Olives:

Bring a large pot of salted water to a boil and place the pods inside. Let the pods cook while the water boils for five minutes. Transfer the pods to a strainer and rinse with cold water. Split open the pods, remove the fava beans, and place the beans in a serving bowl. Toss in the olives, onion, and parsley.

Prepare the ladolemono according to the recipe instructions. Pour into the salad and toss the ingredients. Serve right away or refrigerate for up 1-2 hours before serving. Refrigerating it lets the flavors marinate a little bit.
