Recipe for Greek Style Light Tomato Sauce

There are two kinds of tomato sauce that are used in Greek cuisine. This lighter sauce forms the basis of many recipes, such as rice pilaf.

Greek Style Light Tomato Sauce (Saltsa Domatas Elafria) Recipe Ingredients:

  • 4 tablespoons Greek olive oil
  • 1 small onion, chopped
  • 4 large tomatoes, chopped
  • 1/2 cup water
  • 1/2 teaspoon Greek honey
  • 1/4 teaspoon cinnamon
  • Salt, to taste
  • Pepper, to taste

Instructions to Prepare Light Tomato Sauce:

Pour the olive oil into a large saucepan and set the heat to medium. Let the oil war and then add the onion. Saute for five minutes, or until soft. Add the tomatoes and reduce the heat to medium-low.

Stir to coat the tomatoes with the onion and olive oil. Cook for about two minutes and then set the heat to low. Mash the tomatoes with a potato masher and cook for another few minutes. Stir in the water, honey, cinnamon, salt, and pepper. Cook for an additional ten minutes.

Pour the contents of the skillet into a blender and pulse until completely smooth. Store the sauce in the refrigerator in an airtight container for up to one week.
