If you have a surplus of tomatoes, this pickled green tomatoes recipe is a good way to use them. Make sure that the jars you use are cleaned and sterilized before you put the tomatoes in.

Greek Style Pickled Green Tomatoes (Torshi) Recipe Ingredients:

  • 1 pound green tomatoes, cleaned – if tomatoes are large, slice into smaller pieces
  • 1 clove garlic, chopped
  • 6 whole black peppercorns
  • 2 teaspoons dill seeds
  • 1 1/2 cups white vinegar
  • 1 tablespoon salt
  • 1/2 teaspoon honey

Instructions for How to Make Greek Style Pickled Green Tomatoes:

Pack the tomatoes into a large glass jar, such as a Mason jar.

Add the garlic, peppercorns, and dill seeds.

Pour the vinegar, salt, and honey into a saucepan and heat over medium until the mixture starts to boil.

Pour into the jar and cover tightly. Store in the refrigerator for up to a week unless you seal and can the jars properly.
