Leeks are commonly grown throughout Greece, and this simple rice dish is popularly served when leeks are in season.

Greek Style Leeks and Rice (Prasorizo) Recipe Ingredients:

  • 1/2 cup Greek olive oil
  • 3 leeks, cleaned, trimmed, and chopped
  • 1 garlic clove, chopped
  • 1 cup uncooked rice
  • 1 cup chopped, fresh tomatoes
  • 2 cups water
  • 1/2 teaspoon salt
  • Pepper, to taste
  • 1 tablespoon chopped, fresh parsley

How to Make Greek Leeks and Rice:

Pour the olive oil into a medium saucepan and set the heat to medium. Add the leeks and saute for about five minutes until the leeks soften. Add the garlic and saute for another minute.

Stir in the rice and lower the heat to medium-low. Saute the rice and the vegetables together for about two minutes, making sure not to burn it. Stir in the tomatoes, water, salt and pepper and cover the saucepan. Cover the pan and set the eat to medium so that the water can boil.

Once the water boils, set the heat to low so the mixture can simmer. The rice is ready once all the water is absorbed. This should take 15-20 minutes. Garnish with parsley just before serving.
