Plaki is a traditional method for preparing seafood that involves baking the fish with tomatoes and onions. This recipe uses cod, and fresh cod is much easier to work with. If all you have access to is salt cod, be sure to soak it for a few hours in cold water to remove the salt. You’ll need to change the water about once every hour. Then, proceed with the recipe as written.

Recipe for Greek Style Baked Cod with Tomato Sauce (Bakaliaros Plaki) Recipe Ingredients:

  • 2 pounds fresh or frozen cod filets
  • Salt, to taste
  • Pepper, to taste
  • 1/3 cup olive oil
  • 2 medium onions, chopped
  • 1 recipe Greek tomato sauce 
  • 3 tablespoons fresh, chopped parsley

Instructions on How to Prepare Greek Baked Code With Tomatoes:

Preheat the oven to 350 degrees Fahrenheit. Brush a large baking dish with olive oil.

Place the cod skin-side down on the baking dish in a single layer. (Choose a large enough dish for the fish, or use more than on baking dish if you have to). Sprinkle with salt and pepper and then drizzle with olive oil.

Distribute the onions evenly across the tops of the fish filets. Do the same with the tomato sauce. Sprinkle the fish evenly with parsley.

Place the baking dish (or dishes) in the center of the oven and bake until the fish is cooked all the way through. This should take about 30-40 minutes.
