Kritsinia are served all over Greece and are relatively easy to prepare with whatever dough you have on hand. This recipe uses the dough from Greek-style white bread, but you can use anything.

Greek Breadsticks with Sesame Seeds (Kritsinia) Recipe Ingredients:

  • 1 recipe Greek bread
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup sesame seeds

Directions to Make Greek Breadsticks:

Preheat the oven to 350 degrees Fahrenheit. Spray a baking sheet with nonstick cooking spray.

Prepare the Greek bread and let it rise once. When the dough doubles in size, punch it down and knead it for about five minutes to release the air bubbles.

Crack a large egg into a small bowl and add 1 tablespoon water. Scramble vigorously with a fork.

Break apart a small amount of dough and roll it into a long strip. Place strip of dough onto the baking sheet. Brush the dough with the egg wash using a pastry brush and sprinkle with sesame seeds. Repeat the process until all the dough is used. You may need more than one baking sheet.

Place the sheet in the center of the oven and bake until the sticks are cooked all the way through. This should take 15-20 minutes. Remove from the oven and serve immediately or let cool and store in an airtight container for up to a week.
