Kopanisti is a traditional feta spread that is often served with meze. Although tzatziki is the traditional sauce that makes up a gyro, kopanisti can make a nice addition, as well. This isn’t a traditional gyro, but it could taste great as a nice change of pace!

Gyros with Feta Spread Recipe Ingredients:

  • 4 Greek pita bread rounds
  • 1 recipe kopanisti feta spread
  • 1 large onion, chopped
  • 2 medium tomatoes, diced
  • Crumbled feta cheese
  • Slices of Gyro meat (eyeball it, but about 4-8 slices per sandwich depending on the size of the pita)
  • Dried Greek Oregano, to taste

How to Make Gyros with Spicy Feta Spread:

Make the pita bread and kopanisti according to the recipe instructions.

Place a piece of aluminum foil down on a flat surface. Put a piece of pita bread in the center of the foil. Spread a generous amount of kopanisti across the middle. Top with onion, tomato, and then add the gyro meat. Sprinkle with feta cheese and then sprinkle with dried oregano.

Roll the gyro sandwich and wrap it in aluminum foil so it can hold the shape. Repeat until you’ve used up all the bread.
