Dandelions grow in the wild all over Greece. They’re best enjoyed when they’re young because they are less bitter. However, the bitter, more mature leaves are still edible.

Greek Style Dandelion Greens Salad (Rathiki Salatika) Recipe Ingredients:

  • 1 pound dandelion leaves, young are best
  • 1/2 cup boiling water
  • 1 clove garlic, minced
  • 1 recipe ladolemono
  • Feta cheese, to garnish (optional)
  • Pine nuts, to garnish (optional)

Instructions to Make Dandelion Greens Salad:

Pick the dandelion greens just before you make the salad. Wash them well and blog them dry with paper towels.

Place the dandelion greens into a serving bowl and pour over the water. Add the garlic clove and toss the greens with a pair of kitchen tongs to distribute. Set aside.

Prepare the ladolemono as directed in the recipe. Pour it over the greens and toss to coat. Serve it immediately.
