Spoon sweets are an important part of Greek cuisine. In the past, they offered a way to preserve the fruit harvest. They are also a part of Greek hospitality. This recipe uses grapefruit peels. For best results, use the peels from fresh, in season grapefruits.

Greek Style Grapefruit Spoon Sweet (Frapa Glyko) Recipe Ingredients:

  • Skins from 8 grapefruits
  • 3 cups sugar
  • 1 cup Greek honey
  • 3 cups water
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions on How to Make Grapefruit Spoon Sweet:

Scrap some of the white off of the peels and then chop them into strips.

Add the sugar, honey, and water to a saucepan and set the heat to medium. Stir the mixture well with a wooden spoon and continue to heat until the sugar dissolves. Lower the heat to medium low and then stir in the grapefruit peels, lemon juice, and vanilla extract.

Raise the heat to medium-high and let the ingredients cook, stirring occasionally to prevent the ingredients from sticking to the bottom. When the mixture comes to a boil, set the heat on low and let it simmer until it thickens.

Transfer the spoon sweet into sterilized glass jars and seal them tightly. They’ll keep in the refrigerator for about two weeks unless you take the time to properly seal the glass as if you were canning.
