Vegetables grow in abundance in Greece, and it is also fairly common to cook outside over an open flame on a grill or outdoor oven or fire. When outside of Greece, the grill is the most common method of outdoor cooking. You can easily throw these vegetables on the grill while cooking something else for an easy side.

Simple Greek Grilled Vegetables Recipe Ingredients:

  • Vegetables of choice, such as zucchini, onions, bell peppers, and eggplant
  • 1 recipe ladolemono (oil and lemon dressing)
  • Skewers (enough for all the vegetables)

How to Make Simple Greek Grilled Vegetables:

Cut the vegetables into 1 1/2 – 2 inch pieces and place into a bowl.

Prepare the dressing according to the recipe instructions. Pour over the vegetables. Cover the bowl with plastic wrap and place in the refrigerator for thirty minutes.

Preheat the grill to 350 degrees. Pierce the vegetables through the skewers while the grill is heating.

Please the skewers on the flame. Rotate a quarter of a turn after 2-3 minutes. Repeat two more times. Remove from the grill and serve.
