While most pies do include phyllo, this recipe from Zagori actually doesn’t and can be made pretty quickly. Although this recipe calls for specific ingredients, in Greece this is largely an improvised recipe. Make it a few times as the recipe is written before you start improvising so you can get a feel for it.

Temblopita Zagoriou Recipe Ingredients:

  • 2 cups Greek yogurt
  • 2 large eggs, beaten
  • 1 1/2 cups water
  • 5  tablespoons Greek olive oil
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • 2 1/2 cups crumbled feta cheese

How to Make Greek Lazy Pie:

Preheat the oven to 325 degrees Fahrenheit. Spray a 9 x 13 baking pan with cooking spray or brush with olive oil or melted butter and set aside.

Add the yogurt and eggs together in a medium bowl and whisk until smooth. Whisk in the water, olive oil, and milk and keep mixing until all the ingredients are combined. Add the flour and whisk until smooth. Stir in the feta cheese with a wooden spoon.

Pour the mixture into the 9 x 13 pan. Place in the center of the oven and bake until golden brown. This should take about an hour. Cool for at least 15 minutes. You can also cook this in a round cake pan.
