This class dessert dish is made with rice, sugar, and milk and is perfumed with lemon. It is prepared throughout Greece.
Greek Rice Pudding With Lemon (Rizogolo me Lemono) Recipe Instructions:
- 1 1/4 cups water
- 1/2 cup uncooked, medium grain rice
- 4 cups whole milk
- 1 tablespoon fresh, chopped lemon zest
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Cinnamon, for sprinkling
Instructions on How to Prepare Rice Pudding With Lemon:
Pour 1 cup of water into a medium saucepan and set the heat to medium. Bring the water to a boil and then stir in the rice. Cover the pan and simmer the rice for 15 minutes.
Stir in the milk, and lemon zest, and sugar and simmer the mixture for another 30 minutes. Remove from heat and stir in the vanilla extract.
Pour into serving dishes and sprinkle with cinnamon. You can serve it right away or refrigerate for up to 48 hours.
