Pilaf is a common dish that is served throughout Greece. Some recipes use only rice, others incorporate other grains. This simple recipe uses a combination of rice and orzo.

Greek Style Orzo Pilaf Recipe Ingredients:

  • 2 tablespoons Greek olive oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 3/4 cup orzo
  • 3/4 cup long grain rice
  • 3 cups broth of choice (chicken, lamb, beef, etc)

How to Prepare Greek Orzo Pilaf:

Pour the olive oil into a large saucepan and set the heat to medium. Stir in the onion and celery and saute for about five minutes, or until the onions are soft.

Set the heat to medium-low and stir in the orzo and rice. Cook for about 3 minutes or so, or until the orzo starts to toast.

Stir in the broth and raise the heat again to medium. Cover the pan and let the mixture come to a boil.

When it boils, set the heat to low. Simmer until all the broth is absorbed. This should take 15-20 minutes.
