Recipe for Greek Style Mayonnaise

This Greek-style mayonnaise gets its distinct flavor from the Greek olive oil that is used and light texture from the Greek yogurt. It can be used to make taramosalata and to garnish fish or poultry.

Greek Style Mayonnaise (Mayonaiza) Recipe Ingredients:

  • 2 large egg yolks, at room temperature
  • 1/4 teaspoon ground mustard
  • 1/2 cup Greek olive oil
  • 1-2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon fresh, chopped herbs, such as dill or parsley (optional)

Directions to Prepare Greek Mayonnaise:

Add the egg yokes and mustard powder to a large glass bowl and whisk for 1 minute.

Pour the olive oil into a thin stream while whisking vigorously. Pause about half way through to add the lemon juice. Continue to whisk while adding the rest of the olive oil..

Sprinkle in the salt and pepper and gently whisk in the yogurt. Stir in the fresh herbs, if using.
