potato saladGreek Style Potato Salad (Patates Salata) Recipe Ingredients:

  • 1 1/2 pounds red or white potatoes, peeled and cut in 1/4 inch slices
  • 12 Greek olives, pitted and chopped
  • 1 1/2 tablespoons capers, drained
  • 1 medium green bell pepper, cleaned and chopped
  • 3 scallions, trimmed and finely chopped
  • 2 tablespoons fresh chopped chives
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 recipe ladolemono (Greek lemon and olive oil dressing)

How to Make Greek Potato Salad:

Add the potatoes to a large pot and fill the pot with water so the potatoes are covered. Bring the potatoes to a boil over high heat and then cook for an additional 5 minutes after they begin to boil. Potatoes should be tender but still hold their shape. Drain immediately in a colander and let them sit for at least 45 minutes so that they can dry. The longer they sit in the colander the better!

Pour the potatoes into a large bowl and add the remaining ingredients. Toss well to distribute the ladolemono throughout the salad. You don’t need to toss the ladolemono in with the salad ingredients, though. You can leave it on the table so that people can dress their own salad if you want.
